Alle Belle is a traditional Goan dessert made with thin coconut pancakes filled with sweet coconut jaggery filling. Soft, fragrant, and lightly spiced, it’s often enjoyed with tea or during festive occasions.
Ingredients
For the Pancakes
- 1 cup all-purpose flour
- 2 eggs
- 1 1/4 cups coconut milk (or regular milk)
- 2 tbsp sugar
- 1 tbsp melted butter or coconut oil
- Pinch of salt
For the Coconut Filling
- 2 cups freshly grated coconut
- 3/4 cup jaggery, grated (or brown sugar)
- 1/2 tsp cardamom powder
- 1/4 tsp nutmeg (optional)
- 1 tsp ghee or butter

Instructions
1. Make the filling
- Heat ghee in a pan over low-medium heat.
- Add grated coconut and jaggery.
- Stir continuously until jaggery melts and mixture thickens slightly.
- Mix in cardamom and nutmeg.
- Remove from heat and let cool.
2. Prepare the batter
- In a bowl, whisk together:
- flour
- eggs
- coconut milk
- sugar
- melted butter
- salt
- Mix until smooth and lump-free.
- Let batter rest for 15–20 minutes.
3. Cook the pancakes
- Heat a lightly greased nonstick pan over medium heat.
- Pour a small ladle of batter and swirl into a thin crepe.
- Cook about 1 minute until lightly golden underneath.
- Flip briefly for a few seconds.
4. Fill and roll
- Place a spoonful of coconut filling in the center.
- Roll or fold the pancake like a crepe.
