This quick stovetop recipe works with pecans, walnuts, almonds, or mixed nuts.
Ingredients
- 2 cups nuts
- ¼ cup granulated sugar
- 2 tablespoons brown sugar
- 1 tablespoon butter
- 1 teaspoon cinnamon
- ¼ teaspoon salt
- 1 tablespoon water
- ½ teaspoon vanilla extract

Instructions
- Prepare a tray
Line a baking sheet or plate with parchment paper. - Cook the coating
In a skillet over medium heat, combine sugars, cinnamon, salt, butter, and water. Stir until melted and bubbling. - Add nuts
Stir in nuts and cook 3–5 minutes, stirring constantly, until glossy and coated. - Finish
Remove from heat and stir in vanilla. - Cool
Spread nuts onto parchment paper in a single layer. Let cool completely before breaking apart.
Optional Variations
- Add a pinch of cayenne for spicy-sweet nuts.
- Use maple syrup instead of brown sugar for deeper flavor.
- Sprinkle flaky sea salt on top after cooling.
Oven Method
- Toss nuts with:
- 1 egg white
- ¼ cup sugar
- cinnamon + salt
- Bake at 300°F for 25–30 minutes, stirring halfway through.
